How to prepare finger sandwiches
Breads:
Use a loaf of thinly sliced bread. Any variety is good. The most popular types are white and wheat. To add variety and color, use other breads such as cinnamon raisin, pumpernickel, marble rye, and bakery breads that contain vegetable and cheeses.
Preparing the sandwiches:
Drape a damp tea towel over the loaves of bread until ready to be used.This well-known method keeps the bread moist. With a sharp knife, remove the crust from the bread. Cut out fun shapes with cookie cutters, or cut bread into triangles or squares. Place cut bread into stacks and place under damp towel until ready to assemble.
Fillings:
Pineapple, Sweet pepper and Mint sandwiches
8 ounces cream cheese softened at room temp.
1/4 cup well drained crushed pineapple,
2 tablespoons minced red bell pepper
1 tablespoon fresh pineapple or canned well drained.
Fresh mint or spearmint.
Mix all ingredients well
Makes 1 cup.
Orange Marmalade Cream Cheese Sandwiches
8 ounces cream cheese softened
2 tablespoons of orange marmalade (sweet)
2 tablespoons finely chopped walnuts.
Mix well
Makes 1 cup.
Cucumber sandwiches
Spread softened butter on bread. Thinly slice cucumber slices and place on bread. Garnish with chive or mint. Add salt and pepper to taste.
